Some common things you may note is whether people are making direct eye contact or averting their gaze, how much they are blinking, or if their pupils are dilated.

Maintaining Direct Eye Contact
Direct eye contact is generally regarded as a sign of truthfulness, however practiced liars know this and will fake the signal. Eyes which stay focused on the speakers eyes, tend to indicate focused interested attetion too, which is a sign that the listener is interested and paying attention to the topic being discussed.

People often blink more rapidly when they are feeling distressed or uncomfortable. Infrequent blinking may indicate that a person is intentionally trying to control his or her eye movements.
